Pumpkin Waffles

Serves 2

INGREDIENTS

  • ½ cup Almond Flour, Blanched  

  • 1⁄2 cup Arrowroot Flour

  • 1⁄3 cup Coconut Flour 

  • 3 eggs

  • ½ cup pureed pumpkin

  • ½ cup half and half (Ripple is my favorite brand for an non dairy option)

  • 1 tbsp of maple syrup

  • 1 tbsp  of pumpkin spice (I like the one Trader Joe’s)

  • 1 tsp of vanilla extract

  • 1 tsp of white vinegar

  • 1 tsp salt

  • 1 tsp baking soda

PREPARATION

1. In a medium size bowl, whisk all the dry ingredients together. Set aside.

2. In a separate bowl whisk together the eggs. Slowly add the wet ingredients and continue to whisk.

3. Carefully, pour the dry ingredients into the egg mixture and mix well. 

4. The batter should form as all the ingredients are combined.

4. Turn on your waffle maker. Grease it with an oil spray (my favorites are avocado, coconut or olive oil spray). 

5. Follow the instructions of your waffle maker, carefully pour in the batter and cook until done. Enjoy!
