Grain Free & Delicious Meat Loaf

Ready in 20 minutes

Serves 4

INGREDIENTS

  • 1 onion diced and sautéed

  • 1 lb grass fed ground beef

  • 1/4 cup high quality ketchup (look for no high fructose corn syrup)

  • 3 Tbsp of BBQ sauce

  • 2 Tsp of salt

  • 2 Tsp of garlic powder

  • 2 Tsp of black pepper

  • 1 egg

  • 1/4 cup of cassava flour (my fav brand is @iyafoods)

  • Optional, but a GREAT BONUS add 1/4 to 1/2 cup of cooked quinoa

For the toppings:

  • 3 strips of cooked crispy bacon

  • 1 Tbsp of dried Parsley

PREPARATION

To assemble meatloaf, combine all the ingredients (except for the topping ingredients) in a mixing bowl and mix by hand.

Tear off a sheet of foil then place the meat on it. Form a loaf out of your meat mixture. Wrap up your uncooked meatloaf securing the foil around the edges. This will keep your meat insulated and allow it to not break apart as it cooks. If you’re using an instant pot you want to now pour a cup of water in the instant pot insert. Then insert the steaming rack inside. Now lower the foil wrapped meal onto the steamer rack. Secure the lid and close the valve. Press the meat option on the Insta pot until 20 minutes is displayed. Make sure your steam release is closed to cook. Once done carefully remove the top of the instant pot.

Using oven mitts, carefully remove the foil wrapped meatloaf. Allow it to cool for about 2 minutes then open up to top it! Crumble up bacon on top and sprinkle with parsley. Slice and enjoy!!
